This particular dish uses a Chinese vegetable called yu tsai, but many leafy green vegetables such as spinach can be blanched, dressed with vinegar, a little sugar, and, in this case, ground black sesame seeds. I call this dish yu tsai ae.

nimono

Squash, root vegetables such as taro (satoimo), and other vegetables which require a bit of time to cook can be boiled and then simmered with soy sauce, mirin (sweet rice wine), and sometimes some sugar or additional salt.
